Mustard Microgreen Pesto:
2 cups mustard (hot or mild) microgreens- from 2 grown Ugrogreens kits
2 tbsps chopped garlic cloves
2 tbsps pine nuts
2-3 tbsps extra-virgin olive oil
1 tbsp freshly squeezed lemon juice
1/2 cup freshly grated parmesan cheese
pinch of sea salt
How to:
Place microgreens in your ninja blender or food processor. Add Cloves, Pine nuts, and lemon juice and pulse a few times to chop and blend well.
Add the parmesan and slowly add the olive oil while pulsing to reach the consistency you desire.
What to put it on:
Serve this delicious Pesto on grilled Salmon- absolutely delicious!! Also, try it on pasta or as a topping for your favorite crackers or naan bread.
