Cucumber, Jicama, and Apple Salsa

Ingredients

  • 4 cups of chopped cucumbers, peeled
  • 4 cups of diced jicama, peeled
  • 4 cups chopped and peeled apples
  • 4 cups chopped and peeled carrots
  • 1 jalapeño, chopped 
  • 1 cup of chopped, fresh cilantro (washed and dried)
  • 1 small red onion (chopped)
  • 3 cloves of garlic (chopped)
  • Sea salt and crushed pepper to taste

Directions
Wash and prepare all of the veggies and fruit. Mix the ingredients into a large bowl. Add lime juice and/or salt and pepper to taste. Salsa may be added to chicken, burgers, hot dogs, chips, or other meat products.

Spicy Black Bean and Corn Salsa

Ingredients

  • 3 tablespoons of virgin olive oil
  • 6 husked ears of corn
  • 2 large poblano chiles
  • 1 Walla Walla sweet onion, or another variety, cut in half
  • 1 cup of cilantro, washed and dried
  • 2 tablespoons of pulp orange juice
  • A dash of cumin
  • A dash of chili powder
  • A dash of sea salt
  • A dash of ground pepper to taste
  • 3 cups of cooked black beans, drained

Directions
Rub the ears of corn, chiles, and onions with olive oil and place directly on the grill over medium heat. The veggies may be placed on a wire rack. Cover and grill for eight to ten minutes. Be sure to turn the vegetables two to three times during the cooking cycle. Remove the cobs of corn and chop the onions and chiles. Seeds should be removed from the chiles. Once chopped, add the ingredients to a large mixing bowl and pour in the black beans. Stir the mixture and add all remaining ingredients. Add over meat, potatoes, tortillas, or chips. Mixture may be served hot or cold.

Ingredients

  • 8 large heirloom tomatoes, washed and diced
  • 1 pint of cherry tomatoes, washed and diced
  • 1 small sized red onion, chopped
  • 3 garlic cloves, chopped or minced
  • 2-3 small sized fresh jalapeños
  • Half-cup freshly chopped cilantro
  • Zest from one medium sized lime
  • Lime juice squeezed from one lime
  • Sea salt and crushed pepper to taste

Directions
In a large mixing bowl add all of the ingredients and stir together. Mixture may be chunky or runny depending on the degree of tomato ripeness. Heirloom tomatoes provide an exceptional flavour, especially if several styles are mixed together. The tomato salsa is best served when chilled. Serve with tortilla chips, chicken, or carne asada.
