This healthy, simple to make Chickpea & Blackbean Salad tastes great and keeps in the fridge for days.

Ingredients:

  • 1 15oz can Garbanzo beans (chickpeas), drained
  • 1 15oz can black beans, drained
  • 2 chopped ripe tomatoes
  • 1/2 onion, chopped
  • 1/2 cup parsley
  • 3 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1 pinch sea salt & fresh ground black pepper to taste

Directions:

In a bowl, combine beans, tomato, onion, parsley, olive oil, lemon juice, garlic, salt & pepper.
Allow to sit for 15-30 mins to blend the flavors
