Ingredients:
- 1 15oz can Garbanzo beans (chickpeas), drained
- 1 15oz can black beans, drained
- 2 chopped ripe tomatoes
- 1/2 onion, chopped
- 1/2 cup parsley
- 3 tbsp extra-virgin olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- 1 pinch sea salt & fresh ground black pepper to taste
Directions:
In a bowl, combine beans, tomato, onion, parsley, olive oil, lemon juice, garlic, salt & pepper.
Allow to sit for 15-30 mins to blend the flavors
